What is Chinchin?

Chinchin is a deep-fried snack popular in West Africa, especially in countries like Nigeria, Ghana, and Cameroon. Specifically, chinchin is made from a dough that consists flour, sugar, butter, and milk, with a hint of nutmeg for that extra flavor. After frying it, it transforms into golden-brown pieces in cube shape.

Depending on your preference and taste, you can decide to make chinchin soft and chewy, or hard and crunchy. However, in this guide, we will be sharing the classic crunchy chinchin that will be perfect for snacking and sharing—something everyone can enjoy.

But before that, if you want to learn how to make chinchin, what are the ingredients?

Ingredients and Items for Making Chinchin

There are certain ingredients that needs preparation ahead of time to ensure your chinchin making process smoother. Here, we will be listing the ingredients and items needed to make chinchin.

Main Ingredients:

  1. All-purpose flour: 4 cups (500g)
  2. Sugar: 1/2 cup (100g)
  3. Butter: 1/2 cup (125g), softened
  4. Evaporated milk: 1/2 cup (or substitute with regular milk)
  5. Egg: 1 large (optional, for richer dough)
  6. Nutmeg: 1/2 teaspoon (freshly grated if possible)
  7. Baking powder: 1 teaspoon
  8. Salt: A pinch

 For Frying:

  1.  Vegetable oil (enough for deep frying)
  2.  Gas cooker

How to Make Chinchin Step by Step

Now, let's proceed to the heart of this guide—how to make chinchin step by step.

Chinchin

Step 1: Prepare Your Ingredients

After gathering your ingredients, prepare them. Firstly, sift your flour into a large mixing bowl to remove any lumps. Measure all your ingredients accurately.

Step 2: Mix the Dry Ingredients

Then combine the sifted flour, sugar, baking powder, nutmeg, and salt in the mixing bowl. Stir them thoroughly to ensure the ingredients are evenly distributed and well mixed.

Most importantly, don't forget to include the nutmeg. It's what makes the magic happens. The nutmeg gives the chinchin it's signature aroma and flavour. If you're using fresh nutmeg, grate it directly into the mixture for an extra burst of flavor.

Step 3: Incorporate the Butter

Add the softened butter to the dry ingredients. Use your fingertips to rub the butter into the flour until the mixture resembles fine breadcrumbs.

Note: This step is very important because it determines the texture of your chinchin.

A takeaway: If you have made a pie crust before, then just like it, aim for a crumbly consistency. Take your time, and don't rush it.

Step 4: Add Wet Ingredients

Also, in a separate bowl, whisk the egg and mix it with the milk. Gradually add this liquid mixture to the dry ingredients, stirring as you go. You’re looking for a dough that’s firm but not sticky. If the dough feels too dry, add a splash of milk. If it’s too sticky, sprinkle a bit more flour.

Step 5: Knead the Dough

Then put the dough onto a clean, floured surface. Ensure you knead it gently for about 5 minutes until it’s smooth and elastic. However, you should be careful not to overwork the dough, as this can make your chinchin tough.

Step 6: Roll Out the Dough and Cut it into Shapes

Here, you get to divide the dough into portions. Roll out one portion at a time on a floured surface to about 1/4-inch thickness. This is to prevent it from sticking to the surface. Then, use a sharp knife or pizza cutter to slice the dough into small squares or rectangles. You need to aim for uniform sizes so that will come out evenly.

Note: Make the pieces small. The smaller, the better because chinchin puffs as it fries.

Step 7: Heat the Oil and Fry in Batches

Pour enough vegetable oil into a deep pot or fryer to fully submerge the chinchin pieces. Heat the oil over medium heat until it’s hot but not smoking (about 350°F or 180°C). Test the oil by dropping a small piece of dough into the oil. If it sizzles and rises to the surface, the oil is ready.

Then, pour a handful of the chinchin pieces into the hot oil. Stir gently to ensure browning and continue with this until the chinchin is golden brown. This can take about 3-5 minutes per batch. Do this consistently with each batch.

Step 8: Drain and Cool

When the chinchin is done, then use a slotted spoon to transfer the fried chinchin to a paper towel-lined tray. This will absorb any excess oil. Let the chinchin cool completely before storing—it gets crunchier as it cools.

Step 9: Serve and Store Your Chinchin

After doing the aforementioned, you can as well enjoy your chinchin with a cold drink. You can place it in an airtight container to maintain the crunch. It also lasts for weeks.

Common Mistakes to Avoid When Making Chinchin

As stated below, there are certain things to emphasize upon. These include:

1. Overworking the Dough: This can make your chinchin hard instead of crunchy.

2. Using Cold Butter: Softened butter mixes more easily and evenly into the dough.

3. Frying at the Wrong Temperature: Too hot, and your chinchin will burn before cooking through; too cold, and it’ll absorb too much oil.

4. Cutting Uneven Pieces: This leads to uneven cooking, with some pieces overcooked while others are underdone.

Conclusion

Learning how to make chinchin step by step is a way to add a new team to your snacking list. The process is quite simple and direct. With subsequent practices, you'll definitely perfect it.
